Ingredients:

*1 cup of Mung Dal (Moyashi) beans
*1 cup of Basmati rice
*1 tablespoon of freshly grated ginger root
*2 tablespoons of Ghee
*1 teaspoon of mustard seeds
*1 teaspoon of cumin seeds
*1 teaspoon of fenugreek seeds
*1 teaspoon of ground or powdered coriander
*1 teaspoon of ground fennel seed or powder
*1 teaspoon of turmeric powder
*1 pinch of hing, also known as asafoetida
*3 bay leaves
*6 to 8 cups of water
*Sea salt to taste
*Freshly chopped cilantro or grated coconut for garnish, as you like!

Instructions:

*Rinse the Mung Dal (or beans) and rice together until the water is clear.
*Heat a large pot over medium heat, melt the ghee.
*Gradually add all the spices (excluding the bay leaves), and mix for a few minutes.
*Add the Moyashi beans and rice, mixing well.
*Pour in water, salt, and bay leaves, then bring to a boil.
*Once boiling, reduce the heat, cover the pot, and cook until the Dal and rice turn soft (about 30 to 40 minutes).
*Stir and gently scrape the bottom every 10 minutes.
*Adjust salt if needed and serve, topped with fresh cilantro, grated coconut, or a simple bay leaf.
